In Yee Sang (or Yu Sheng) is a raw fish salad that is usually eaten throughout the entire Chinese New Year.

Yee Sang can also be prepared as a vegetarian dish as well by omitting the fish and replace them with more vegetables. Typically, the vegetables included are shredded radish, carrot, yam and sweet potato with added coloring, pickled ginger and green papaya.

The most common raw fish used in the set of dishes is salmon while some might like this dishes with jelly fish for an extra chewy texture. Other condiments that usually go with Yee Sang are crackers, crispy wanton skin, roasted peanuts, roasted sesame seeds as well as pickled fruits and vegetables.
